I avoided Sunday not because of my beliefs, but because of the beliefs of about 50% of the people in this area. I regret that now. I would have liked to have tried Sunday as well. I may have had better results.
Saturday night I ran out of time calling everyone back.. The frustrating part was that some of my hottest bidders could not be reached on the phone. I knocked it off and told everyone I would pick it up on Monday. ( another mistake I think ) .. Monday the bidding started again, after I got home from work. The energy was gone, but I still had hot buyers. Then I made another mistake. One buyer wanted to wait until the next day because he had some commitmentsl so I did that for him. I totally messed it up by dragging it out.
Had I just gone by the book and not modified it to avoid Sunday I could have caught more people home. Those that had a big problem with doing business on Sunday would simply have to adapt or bow out.

Tuesday through Saturday doesn't work as well as skipping to Monday. It's been tried--Sunday is the best Newspaper Advertising day--some people only look on Sunday. Unless your beliefs prevent you from running advertising on Sunday, you will do far better Wednesday through Monday, skipping Sunday.
